The One Group has come a long way since its founding as a single steakhouse in NY’s meatpacking district back in 2004. Today the company is all about vibe with high end locations coast to coast. Yes, STK, a modern twist on the American Steakhouse and Kona Grill have been The One Group’s bread and butter for years, however, their recent acquisition of Benihana and RA Sushi have definitely upped the ante adding more than 100 locations to their portfolio.
We talked with Stephanie Castaneda, Director of Beverage for The One Group, about everything from her birth sign (think twin), her favorite cuisine (hint: it involves Raita) to her love of red wine.

Welcome to The Mark Wine News. Okay, so I clearly remember you talking about growing up in a really cool place when we were at Inniskillin Winery last year cooking Indian food.
SCSCStephanie Castaneda[Laughs] Yes! I was born in Brooklyn, New York and lived there until I was ten and then we moved to Guatemala until I was 20.

That is so fun! What a fantastic experience for you. What allowed you to live in such an adventurous country?
SCSCStephanie CastanedaMy parents were restaurant owners in Guatemala.

So, you definitely have the hospitality gene. Did the restaurant business call to you at a young age or did you have other aspirations?
SCSCStephanie CastanedaI once wanted to be a veterinarian, but I quickly realized that wasn’t going to work—just the sight of an injured animal brings me to tears.

Do you have any pets now?
SCSCStephanie CastanedaUnfortunately, I travel too much to have pets, but I absolutely adore dogs.

Were you a foodie as a kid? Or more a mac-n-cheese, Spaghetti O’s kind of kid?
SCSCStephanie CastanedaDefinitely not a foodie! McDonald’s was my favorite growing up—and to this day, it’s still one of my guilty pleasures.

Their french fries definitely reign supreme. Do you remember your first taste of wine?
SCSCStephanie CastanedaUnfortunately, I don't, but I vividly remember falling in love with it about ten years ago at an impromptu wine tasting. Seeing people's reactions—their passion and joy—made me feel instantly happy.

Did you ever have one of those “aha” wine moments?
SCSCStephanie CastanedaI was having dinner with friends who owned a wine shop in Los Angeles. They had traveled the world seeking out exceptional wines from small, independent producers. That night, they introduced me to Amarone—and it was the moment that truly solidified my love for wine.

Nectar from the Gods. I totally get that. How did you get into the business?
SCSCStephanie CastanedaI started as an Executive Assistant to a nightclub owner in Los Angeles and eventually transitioned to working at the club itself. He taught me everything I know about hospitality.

SCSCStephanie CastanedaWhen a wine has a great story behind it, an eye-catching label, or something unique that makes it stand out, we’re instantly more excited to try it—hoping the juice inside lives up to the rest.

Who doesn’t love a great story! True stories. Great wine. That’s our mantra. So how do you pick new wines?
SCSCStephanie CastanedaWe always start with the traditional RFP process to see what our partners are bringing to the table—but discovery doesn’t stop there. I’m constantly dining out, and I make it a ritual to order something unfamiliar or something I haven’t tasted in ages. It keeps my palate curious and reminds me that great wines often find you when you’re not looking for them.

Any particular varietal you would love everyone to try?
SCSCStephanie CastanedaI think exploring wine is all about timing. It depends on where you are in your journey—I wouldn’t pour an Amarone for someone just starting out. It’s one of those wines you come to appreciate once you’ve fallen a little deeper in love with wine.

How often do you change your wine program?
SCSCStephanie CastanedaWe refresh our program once a year, but we’re always keeping our eyes—and our glasses—open. When a wine feels right, when it just fits the moment, we don’t wait for the calendar to tell us to add it.

How do you decide which wines are right for the STK? Kona Grill? Saltwater Social?
SCSCStephanie CastanedaIn curating our list, we look at how guests will receive the wine—whether it’s something they’ll recognize and get excited about, if the price feels right, and if it’s something we can count on being available.

Do you find that current wine trends like bubbly, red blends and rosé work for you?
SCSCStephanie CastanedaTrends come and go, and guests will always explore what’s new. But when it comes to wine and food, people ultimately gravitate back to what feels right—what comforts them, what connects.

Yes. The consummate pull of comfort. Have you noticed any changes in what people are drinking?
SCSCStephanie CastanedaWhen it comes to STK, I don’t think there’s been a dramatic shift. Guests still come to celebrate—it's part of the brand’s DNA. They’re enjoying their favorite wines and spirits, but with a bit more balance and moderation than before.

Do you have any favorite wines? Grape varietals?
SCSCStephanie CastanedaRed is my go-to. I haven’t met a red wine varietal I didn’t like.

[Laughs] How about a favorite cuisine?
SCSCStephanie CastanedaIndian. I love Indian food.

I definitely remember that from our cooking experience in the kitchen at Inniskillin Winery. That lunch we all made was amazing. Do you have a favorite food and wine pairing?
SCSCStephanie CastanedaSteak with wasabi and Syrah.

I was not expecting that, but I am definitely intrigued. I am pretty sure I have only had wasabi with sushi. We will be trying this combination with a bottle of Gust Syrah. What’s your life like today?
SCSCStephanie CastanedaI moved to Scottsdale, Arizona, nine months ago to be with my partner, and it has truly been one of the best decisions I’ve ever made. After four years of long-distance, building a life together has been an incredible experience—especially as we continue to grow both personally and professionally.

Wow. Four years of long distance is quite the test. I kind of remember us talking about this. Scottsdale is a pretty cool place. So how does your life fare versus how you pictured it when you were younger?
SCSCStephanie CastanedaI don’t think I ever had a fixed idea of who I was supposed to be. I was always taught to follow what feels right and pursue what truly makes me happy.

And that you have! Do you have any favorite travel spots?
SCSCStephanie CastanedaFor Work, Italy. Leisure, definitely Thailand.

Very jelly. I have never been to Asia but Thailand is first on that list. Do you have a favorite getaway spot?
SCSCStephanie CastanedaIt might sound a little corny, but my favorite place is truly my home. It's my safe haven, a space that brings me peace and serenity. I travel so much for work that being home is my favorite spot to be.

That makes complete sense. I am pretty sure Mark feels exactly the same way. Is there anywhere you haven’t you been that you are “jonesing” to get to?
SCSCStephanie CastanedaI spent 48 hours in Japan and would love to return to explore more of the country.

My number two spot on my Asia “to do” list! What do you like to do when you aren’t working?
SCSCStephanie CastanedaAfter spending 20 years in the hospitality industry, 15 of those in operations, I’ve realized how many birthdays and special moments I’ve missed along the way. So now I make a conscious effort to be fully present for my loved ones. When I’m not working, I cherish the time I spend with family and friends. Though they’re scattered across the country, traveling to see them feels less like a chore and more like a meaningful journey—one that’s absolutely worth every mile.

You had me “to be fully present for my loved ones.” Stop and smell the roses so to speak. Such a beautiful hobby. Is there anything you’ve done that you never thought you would have?
SCSCStephanie CastanedaMoving away from Los Angeles to pursue my corporate career.

From the looks of things, that was not only brave but strategic and smart. Is there anything you’ve been afraid to do?
SCSCStephanie CastanedaI've always been a fearless person—when something interests me, I go for it. But being a Gemini, I’m full of curiosity and constantly drawn to new ideas. One day, I’m all in, and the next, my mind is off chasing something completely different.

[Laughs] Those twin personalities. Is there anything everyone should know about you that might surprise us?
SCSCStephanie CastanedaI pretty much only listen to sad, heartbreak songs—so maybe that makes me a hopeless romantic... or just someone who really loves a good emotional spiral.
